Recipe a la Mode

I thought I would share some of my favorite recipes. I'll let you know where the skeleton outline is from, but I'll be posting my tweaked versions here. Enjoy!

This moment's recipe: CAPPUCCINO MUFFINS

Servings: 25-30 muffins


  • 4 cups flour (500g)
  • 1 cup sugar (200g)
  • 1 cup packed brown sugar (220g)
  • 1 Tbsp baking soda
  • 1 Tbsp instant coffee granules
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups milk (475ml)
  • 1 cup melted butter (225g)
  • 2 tsp vanilla extract
  • about 2 cups mini-semisweet chocolate chips (345g)

Mix together flour, sugars, baking soda, coffee, cinnemon, and salt.  In a separate bowl, mix eggs, milk, butter, and vanilla, then stir this into the dry ingredients bowl.  Fold in chocolate chips as desired.  Fill ungreased or paper-lined muffin cups 3/4 full, or 7/8 for larger muffins.
Bake at 375F or 190C for 20-25 minutes or until a toothpick comes clean.
